After a pork-centric dinner, I thought it would be nice to resurrect a food which has absolutely no nutritional value, but which brings great joy (and girth).
Apart from scrummy little pieces of lard in Hokkien noodles, the best use for pig skin has got to be the Filipino street snack, chicharon! It used to be only available from street vendors in the Philippines, but it has now gone commercial. The Filipinos sell chicharon in a bag like instant popcorn, ready to be nuked in the microwave and relished out of the bag!
